Organic Vegetarian Chili
Ingredients:
One organic green pepper- chopped
One organic yellow onion - chopped
8oz of organic white button mushrooms - chopped
One 8 oz package of frozen organic corn
One package of chopped organic spinach-use 1/2 of the package
One bunch of organic cilantro - chopped
One can of organic red kidney beans- drained
One can of organic white kidney beans - drained
One 16 oz can of organic diced tomatoes
Two cans of Amy's organic tomato soup - low sodium
1 tbsp of organic chili powder
1 tbsp of organic cumin
1 tsp of organic cayenne pepper
2 tbsp of olive oil or grape seed oil
One 8oz package of organic chedder cheese - optional
Cooking directions:
Saute the onion, pepper and mushrooms in the bottom of a stock pot with olive oil.
Add all other ingredients when the onions are translucent. Simmer for about thirty minutes. Serve with a topping of cheddar cheese.
