Organic Chicken Soup

Italian Style


1 whole organic Chicken (3+ lbs)

2- 20 oz organic chicken broth

2 tablespoons of organic tomato paste

3 organic carrots

4 organic celery stalks

1 large organic onion

1 lb orzo organic pasta

Parmesan cheese


Cut vegetables into bite size pieces

Wash chicken

Place Chicken in stock pot with chicken broth breast down


Place stock pot on stove and bring to a boil

Lower heat when reaches a boil

Simmer for about a half an hour, then turn chicken over in pot, breast side up

Skim the froth off the top of pot

Add the vegetables

Add 2 tbsp of tomato paste

Simmer chicken soup for another 45 minutes or until the chicken is cooked

Bring a pan of salted water to boil for the orzo


Remove chicken from stock pot and place on serving platter (make sure to drain excess liquid off)

Strain the cooked orzo

Ladle the soup broth, vegetables and orzo into soup tureen and cover

Cut up chicken

Ladle soup into bowls - add - chicken and parmesan cheese
